Anyone who knows me knows that I do love a Buddha Bowl!

They are super quick and easy to make and you can literally just throw everything together!!

It may be deemed a little uncouth, but I do love eating my dinner out of a bowl too!

So here’s my Beautiful Buddha Bowl which is full of Vitamin D, Magnesium and Omega 3’s.

I hope you enjoy it!

Serves 2

4 cups baby spinach

1 cup quinoa (cooked)

1 tin salmon  (When looking for canned salmon try to get the ones with the most vitamin D and make sure cans are BPA-free)

.2 tablespoons sesame seeds

½ diced red onion (optional)

2 tablespoons sesame oil

2 tablespoons vinegar

1 tablespoon lemon juice

pinch salt and pepper

 

Split spinach, quinoa, wild salmon, sesame seeds, and onion (if using) between two bowls.

Mix sesame oil, rice vinegar, and lemon juice together and pour on top of prepared Buddha bowls.

Add salt and pepper to taste.

Serve & Enjoy!

Why not experiment with different veggies or add some freshly picked herbs…vary your fish by trying smoked or peppered mackerel and sprinkle on some pomegranate seeds for a lovely finishing touch!
