I must say, I do love a bit of Sushi, but I’ve never tried making it – I’d rather leave that to the experts!
I have made this though and its two of my favourite things combined!
Sushi + Buddha Bowl = Seaweed Sushi Bowl!
It’s great for balancing hormones and seaweed is full of iodine which helps keep the Thyroid happy.
This one is vegetarian, but there’s nothing stopping you from popping in a few strips of smoked salmon – or any fish that takes your fancy!
It’s a brilliant lunch to take on the go and if you keep the dressing in a separate container and give it a shake before adding it to the sushi bowl, it keeps everything super fresh!
I really hope you try this out for size and enjoy it as much as I do!
Here it is – (This recipe is for 2 people)
1 cup cooked rice
1 avocado- sliced thinly.
½ cucumber – diced.
½ red pepper – sliced thinly.
1 spring onion – chopped
2 tablespoons dried seaweed – or crumbled Nori sheets.
2 tablespoons sesame seeds
3 tablespoons rice vinegar
3 tablespoons tamarin sauce
1 tablespoon lemon juice
1 tablespoon sesame oil
½ garlic clove
Pinch salt and pepper
Method:
Split the first seven ingredients into two bowls.
Mix the rest of the ingredients together to make the dressing.
Pour the dressing over the sushi bowls.
Serve & Enjoy!
