Ok, so let’s get some Selenium into our body!

Brazil nuts are by far the best source of selenium (tinned tuna also) and selenium is essential for keeping a healthy functioning thyroid and immune system.

Here’s a simple recipe which makes a delicious breakfast or dessert, especially when topped with berries.

Chocolate Chia Seed Pudding

Serves 4

½ cup Brazil nuts

2 cups water

Cheesecloth (optional)

½ cup chia seeds

¼ cup unsweetened cacao powder

½ teaspoon ground cinnamon

¼ teaspoon sea salt

1 tablespoon maple syrup

Method

Blend Brazil nuts in water in a blender/ nutri-bullet  until you get smooth, creamy milk. If desired, strain it through a cheesecloth.

Add Brazil nut milk and other ingredients into a bowl and whisk until combined.

Let sit several minutes (or overnight) until desired thickness is reached.

Serve & Enjoy!

**Make sure you don’t go too over board with selenium supplimentation as too much could cause nausea and vomiting as well as other symptoms – long term. (The upper limit is 350micrograms, if you’re counting – but you should be ok with this recipe!! ) If in doubt, always consult your GP.
